A very simple and inexpensive meal. Bacon potato gnocchi

The name “gnocchi” sounds exotic, but it’s actually a very simple potato and flour dish.

Gnocchi is predominantly an Italian dish. And although it may seem like something complicated from exotic products, these are dumplings or dumplings made from potatoes and flour.

They are cooked with various sauces, spinach is added for the green color, but in fact, this is a very simple to prepare, delicious and satisfying side dish.

Gnocchi can be made ahead of time and frozen.

Gnocchi with bacon

Contents:

  • potatoes – 700 g;
  • An egg;
  • Flour – 200 gr
  • bacon – 200 g;
  • Salt, fresh parsley.

Wash the potatoes well and boil them in their uniforms in salted water. This will take about half an hour. After the potatoes have cooled, peel and mash or grate on a fine grater. In principle, gnocchi can also be made from leftover mashed potatoes.

Add the egg and salt, mix and add some flour, mix and add again. Continue until the flour is gone and you have a non-sticky dough.

The amount of flour depends on how much starch is in the potatoes. The less flour you add, the softer the gnocchi will be.

Knead the dough on the table. However, there is a trick here, you do not need to knead as usual, you need to fold it from the edges to the middle with light movements and stick it together.

Divide the dough into four parts, roll the balls. Form each ball into a sausage and cut into slices about two centimeters wide.

Next, you can roll future gnocchi along the tines of the fork, making grooves in them, or leaving them as they are, making a recess in them. The grooves are not made for beauty, but for better absorption of the sauce. Italians use a special board for this purpose, but a fork will also work.

If the gnocchi turned out too much, they can be frozen, they will keep in the freezer for up to two months.

Fry the bacon in a pan. Boil the gnocchi in salted water: throw in boiling water, cook for another twenty minutes after rising. Then add them to the bacon and mix. It can be fried lightly. Sprinkle with fresh parsley before serving.

You can also make delicious potato pancakes with sauerkraut.
