Young Cabbage Pie

Contents:

For testing:

  • Flour – 500 g;
  • Milk – 250 ml;
  • Butter – 250 g;
  • Salt – half a tablespoon;
  • sugar – 2 tbsp. l.;
  • fresh yeast – 22 g;

To fill:

  • One head of young cabbage;
  • milk – 150 ml;
  • Butter – 20 g;
  • vegetable oil – 50 ml;
  • Salt, pepper.

Mix the flour, salt, sugar in a bowl, crumble the pressed yeast. Add the chopped butter and rub the dough into the crumbs. You can do this by hand or use a food processor.

The milk needs to be warm for the yeast to kick in, so just warm it up a bit in the microwave and mix it with the other ingredients. The dough will be sticky and soft just as you want it to be. Cover it with a towel and let it rise for an hour.

Now it’s time to prepare the filling. Cut the cabbage into smaller pieces, best in cubes, add a tablespoon of salt, mix and grind with your hands, pour boiling water to soften the leaves and leave for ten minutes. Then drain the water and squeeze the cabbage.

Heat the vegetable oil and butter mixture in a deep pan. You can make do with a vegetable, but it will give a nice flavor to the creamy filling. Put the cabbage and fry for about ten minutes, then pour the milk and simmer on low heat for 20 minutes until all the liquid has evaporated.

Salt and pepper if needed.

Grease a baking sheet with butter or simply cover it with parchment. Divide the dough into two parts. Roll the large one into a circle and place in a mold with the edges hanging down. Place the filling, roll out a smaller portion of the dough and put it on top of the filling, close the edges, make a hole in the middle to let the steam escape. Brush egg on top and sprinkle sesame seeds.

Bake in the oven preheated to 180 degrees for about an hour until the crust is golden brown.

You can also make jellied cabbage pie. The dough does not need to be kneaded, which saves a lot of time.
