Ingredients (for 4 servings):
- lettuce leaves – 2 bunches;
- chicken fillet – 2 pcs .;
- oil – 3-4 tablespoons;
- cherry tomatoes – 8 pcs.;
- quail eggs – 10 pcs .;
- parmesan cheese, croutons – optional.
For refueling:
- Seasoning for Caesar salad – 1 pack;
- mayonnaise – 5 tbsp. I;
- Greek or natural yogurt – 3 tbsp. I;
- salt, pepper, herbs of Provence – to taste,
- vegetable oil in which the chicken was fried.
Cooking method:
Boil quail eggs in boiling water for 5 minutes. Wash the chicken fillet, pat dry with a paper towel, rub with salt, pepper and spices, leave to marinate in the refrigerator for a while. Wash the lettuce leaves and let them dry.
Next, heat the vegetable oil in a pan, put the chicken fillet and fry on both sides over medium heat until golden. Put the finished meat in foil, wrap tightly and leave for 20 minutes.
Meanwhile, we are starting to fill up. In a deep bowl, put mayonnaise, yogurt, spices, vinaigrette, pour the fat in which the chicken was fried and the fillet juice accumulated in the foil. Blend everything until smooth. The sauce should be slightly thin. If it turned out to be thick, then you need to add a spoonful or two of boiled water to it.
The final stage is the design of the salad. Cut the lettuce leaves into pieces, add a third of the sauce, mix gently so that all the greens are wet. Put the leaves on serving plates, cut the diced chicken fillet, halved quail eggs, sliced and tomatoes into quarters. Pour remaining sauce over each serving. Sprinkle with grated Parmesan, if desired. Place the crackers.
