Kardzhali-style fried potatoes gain a special taste when cooked with zucchini and sweet pepper.
Kardzhali is a region in the south of Bulgaria. If there is a vegetable principality somewhere, then this is it. On the Turkish border, Kardzhali managed to defend their right to fries as they wished, not as the canon and the Qur’an prescribe. And they always wanted it with zucchini, sweet peppers and tomatoes. Kardzhali style fried potatoes

- potatoes – 500 g;
- zucchini – 1;
- sweet pepper – 1;
- tomatoes – 2;
- vegetable oil;
- Dill;
- Red pepper;
- salt
We are preparing vegetables in Kardzhali style for french fries. We clean the zucchini, cut it into rings and divide each into 4 parts. Sweet pepper (also known as bell pepper), peeled and chopped. Cut the potatoes into cubes or slices as you wish.
Pour vegetable oil into a preheated pan, pour potatoes and zucchini, fry over medium heat, stirring occasionally. After 5 minutes, add the chopped sweet pepper. Finely chop a large tomato or several medium tomatoes, but add only 5 minutes until ready (you do not need to do this before – otherwise the potatoes will not be fried, but boiled). Pour paprika, salt and – very important! – Dill. It should be too much, it will give the dish an indescribable Kardzhali taste.
We mix everything well and leave it under the lid to reduce the fire. After 5 minutes, our Kardzhali Fried Potatoes are ready.
