Potato craze – an unlimited field of experimentation, especially during fasting
There are many recipes for potato craze. Here is an expanded version of the idea from the 1000.menu resource. It is good on fasting days and is quite suitable for vegetarians all year round. In it, mushrooms coexist with carrots – and this is one of the best combinations for mushrooms, which for some reason is not very common in cooking.
Potato craze with mushrooms and carrots
Contents:
- potatoes – 800 g;
- mushrooms – 300 g;
- carrot – 1;
- onion – 1;
- breadcrumbs;
- wheat flour ;
- vegetable oil ;
- salt
For a mushroom and carrot potato frenzy, first boil the potatoes in salted water. We make a puree from it.
Mushrooms (best champignons) are washed, dried, cut into small cubes. Chop the onion in the same way. Do not grate three carrots. In a frying pan with vegetable oil, first fry the onion, then put the mushrooms and carrots on it. Mix it up, get it ready. Salt in the middle of cooking.
Add flour and a little vegetable oil to the cooled potato mass. Mix well and leave for 10 minutes so that the flour swells and the mass becomes more viscous. We make cakes from this dough, put the carrot-mushroom filling in each of them, pinch them like cutlets. In a heated frying pan with vegetable oil, fry on both sides until golden brown.
Serve the lean wild mushrooms and carrots hot.
