Kulich kruffin is an unusual and delicious Easter cake that appeared in Australia in 2013 and is rapidly gaining popularity around the world.

Now the krafins have reached Ukraine. Craffin is a mix of croissants and donuts. It is baked from rich yeast dough covered with soft butter and dried fruits. Cruffin has a soft crumb and a crispy crust, and it also looks very good. Focus tell me how to cook

Kraffin

Contents:

  • flour – 350 g;
  • fresh yeast – 20 g (or dry – 7 g);
  • milk – 110 ml;
  • sugar – 80 g;
  • salt – 1/2 teaspoon;
  • egg – 1 pc.;
  • egg yolk – 2 pcs .;
  • butter – 40 g (melted) + 120 g (for lubrication);
  • ground nutmeg – 1 teaspoon (ground);
  • dried cranberries – 200 g (or raisins);
  • almond leaves – 100 g (or any chopped nuts);
  • vanilla sugar – 8 g;
  • The rind of a lemon.

Prepare yeast dough. Dissolve the yeast and 1 teaspoon of sugar in warm milk, put in a warm place until the foam cover appears.

Prepare the dough for kraffin. Beat eggs, egg yolks, sugar, vanilla sugar and lemon zest until fluffy and slightly foamy. Add the brew and mix. Gradually add the sifted flour and knead the dough. Finally, add the melted butter and knead the dough for at least 10 minutes until it stops sticking to your hands.

Take the dough in an oiled bowl, oil it lightly, cover it with cling film and leave it in a warm place without air flow for 1-1.5 hours until it doubles.

Pour boiling water over the cranberries for 15 minutes, strain and pat dry with paper towels. Fry the almond flakes in a dry frying pan.

Divide the dough into three equal parts. Roll out each piece into a very thin rectangular sheet. Lubricate the layer with softened butter. Sprinkle the dough with nutmeg, dried cranberries, and almond flakes. Roll up starting from the long edge. Cut the roll lengthwise into two pieces with a sharp knife, without cutting about a few centimeters from one edge.

Wrap one piece in a spiral in the form of a snail. Lay the uncut edge on it. Wrap the second piece around the first and form a double snail.

Put the pie on a greased baking tray, cover it with cling film and leave it in a warm place for 30-40 minutes until it rises.

Preheat the oven to 180 degrees. Brush the beaten egg on top and bake in the oven for 25-30 minutes until golden brown.

Take the kruffle out of the oven and let it cool a bit. Transfer to a plate and sprinkle with powdered sugar.

You can also cook delicious cottage cheese Easter with condensed milk.
