- 2 zucchinis;
- 150 g flour;
- 40g grated Parmigiano-Reggiano;

To make a delicious one-pan pumpkin pie, first peel, wash and thinly slice the pumpkin. In a bowl, whisk together the flour, grated Parmesan, 30ml extra virgin olive oil, water, salt and freshly ground black pepper.
Mix with a hand whisk until you obtain a homogeneous dough. Add the zucchini and chopped mint. Mix until the pumpkin is completely covered with dough.
Place half of the mixture in a non-stick pan that you have previously greased with a little oil. Place 4 slices of cheese on top and cover with remaining zucchini mixture. Sprinkle with breadcrumbs, sprinkle with oil and put on fire. Cook for a total of 25 minutes on low heat with the lid closed, be sure to turn the delicious cake half way through the cooking process as if you were making an omelette.
At the end of cooking, carefully transfer the delicious pumpkin pie from the pan to a serving plate, let it sit for a few minutes, and then serve.
