We all have taste preferences – some foods we enjoy, and some we prefer to avoid at all. But Science Alert seems like scientists have come up with a clever trick that can dramatically improve the taste experience without using a single additional ingredient.

About fifty volunteers participated in a new study by a group of scientists from the University of Portsmouth in the United Kingdom. Initially, buyers were divided into two groups using a special questionnaire to determine food selectivity.

Note that there is no effective way to identify a picky eater, but scientists suggest that this group is those who have a limited diet, have a strong aversion to any product, require special meal preparation, have trouble eating new foods, and also exhibit a combination of all these characteristics.

After that, the food was served to the buyers on plates of three different colors, blue, red and white. The researchers noticed an interesting pattern: nothing changed for the picky eaters group, but the picky eaters group reported changes in their taste sensations.

According to the study’s co-author, psychologist Lorenzo Stafford, this trick can be helpful for those trying to include hated foods in their diet. In the study, all participants were given servings of salt- and vinegar-flavored potato chips and were asked to rate them according to desirability, saltiness, and flavor intensity. The scientists found that the color of the utensils had no effect on flavor intensity, but varied in the other two categories for picky eaters. For example, appetizers in the red and blue bowls were perceived as saltier than those in the white bowls, while the chips in the red bowl were perceived as the least desirable.

Note that previous studies have shown that picky eaters can limit their diets to literally no more than two dozen items. Stafford believes their discovery could help picky eaters to significantly expand their diets and therefore improve their health.
