The filling can be prepared both fresh and from sauerkraut.
It is very easy to prepare delicious meatballs. The main thing is to make the right dough and prepare a delicious filling, and then not digest what happened.
Cabbage dumplings are a classic. Also, the filling can be made from fresh cabbage or sauerkraut. You can even combine these two methods, but in any case it will be great.
Vareniki with fresh cabbage
For testing:
- wheat flour – 400 g;
- An egg;
- boiling water – 200 ml;
- Vegetable oil – 1 tbsp. l.;
- Salt – 0.5 teaspoon
To fill:
- White cabbage – 500 g;
- One small onion;
- a carrot;
- Salt – 1 teaspoon;
- sugar – 0.5 tsp;
- Vegetable oil – 3 tbsp. I;
- Ground black pepper.
- Vegetable oil – 3 tbsp.
If you do not intend to cook lean meatballs, this dough recipe is universal. Suitable for all kinds of salty and sweet dumplings. Prepare the filling before kneading the dough, as it must cool completely.
Chop the fresh cabbage into thin strips and remember with your hands. Drain the water, heat the oil in a pan and put the cabbage, fry for about five minutes over low heat.
Grate the carrots on a coarse grater, finely chop the onion and add to the cabbage. Cook all the vegetables together under the lid for about 20 minutes. The filling is ready when the thickest parts of the cabbage are soft. At the end, add salt, sugar and pepper to the filling.
The dough is easy to make. Add the beaten egg to the flour with salt and a spoonful of butter. Then pour boiling water into the flour and knead the dough: first with a spoon, then with your hands.
Vareniki with sauerkraut
To fill:
- sauerkraut – 400 g;
- a light bulb;
- Vegetable oil – 2 tbsp. l.
Finely chop the onion and fry in vegetable oil. Add the sauerkraut and cook for 15 minutes, cut if the cabbage is long. If it’s too sour, add some fresh.
