A new take on a classic. Delicious liver cake recipe from Evgeny Klopotenko

Liver cake is usually prepared with mayonnaise, but the Ukrainian chef has proposed a new original recipe for this dish with strawberries.

Liver cake is a dish that everyone knows but is rarely prepared and prefers to try at a party. The classic recipe suggests that in addition to the liver pancakes, it will also include garlic mayonnaise. But the famous Ukrainian chef Evgeny Klopotenko offers a new take on this dish. There’s no mayonnaise in her recipe, but it does have strawberries and soft cream cheese.

Before you start cooking, you should choose a delicious chicken liver. There should be no yellow spots – this means that bile got into the offal, which means that the liver will be bitter. It should also be cleaned of films and excess oil, rinsed well and dried with a paper towel.

Liver cake with strawberries

Contents:

  • Chicken liver – 500 g;
  • Two eggs;
  • Flour – 3 tbsp. l.;
  • Frozen currants – 150 g;
  • milk – 150 ml;
  • cream cheese – 400 g;
  • Onion paste – 100 gr. (optional);
  • Vegetable oil – 2 tbsp. l.;
  • pepper and salt to taste.

First you need to defrost the currant berries. Put them in a bowl and let them thaw at room temperature.

Clean the chicken liver from films and fat, rinse with cold water. Add milk and two eggs to the liver and beat with a blender until smooth. Add three tablespoons of flour and add vegetable oil. Salt and pepper and beat again with a blender. The workpiece should resemble dough for thin pancakes.

Heat a pan with a little vegetable oil and fry the liver pancakes until golden brown on both sides. Ready pancakes should cool.

Grind the thawed currant berries with a blender, you will get berry puree. Mix the currants with the cream cheese.

Now collect the liver cake. Lubricate each liver pancake with cream cheese and berry puree and collect in a pile. Fill with onion jam. After sending the liver cake for several hours in the refrigerator.

You can also prepare the filling for delicious fried pies from the liver. The pie dough recipe is very simple – it needs yeast, flour, sugar and water.
