Don’t be in a hurry to throw away the shrimp shells because they can make a delicious French soup.
Biscuit is a French dish. The history of cream soup dates back several centuries. The main ingredient of the dish is crustaceans (necessarily – shells in most cases – and meat). The recipe also includes cream, onions, you can take garlic and celery. From crustaceans, crayfish, shrimp, crayfish, lobster, crab, etc. In addition, you can use broth (fish, less often chicken) and white wine. Some recipes also include the addition of rice.
Contents:
- Shrimp shell – 200-300 g
- carrot – 100 g
- Onion – 100 g
- Butter – 30 g
- Vegetable oil – 2 tbsp.
- Flour – 20 gr
- Water (or fish broth) – 800 ml
- Cream – 100 ml
- Salt, spices – to taste
Cooking method:
First, take a frying pan, send butter into it and set it on fire.
We take a pan with a thick bottom, pour a couple of tablespoons of vegetable oil. Finely chop the carrots and onions and then pour them into the pan. Fry on low heat so that a golden crust does not form. (The onion should remain transparent.)
Add the flour to the melted butter and fry for 1-2 minutes.
Put the shrimp shells in the pot with the vegetables. Fry for a few minutes. Then add water there, mix and let it boil for 7-10 minutes.
We chop the soup in a blender. Next, the resulting mass must be passed through a sieve (you can also take gauze).
Add salt, spices, cream and pre-roasted flour. Put on the stove and boil. Done, bon appetit!
