Vegetables are very important in Tuscan soup. We start with them. Grind the carrots on a coarse grater. Cut the onion into cubes, squeeze 3-4 cloves of garlic through a press. All are fried in vegetable oil until golden. We send it to the pan, add canned beans there, fill it with water and bring to a boil. We remove the skin of 2-3 tomatoes (we wet with boiling water and quickly cool – after that the skin peels off almost by itself). Finely chop and add to the pot. We remove the fire and leave it alone for half an hour.
After this time, add 2-3 chopped potatoes, bring to a boil and leave for another 20 minutes. Along the way, we season the almost instant soup with a bunch of Italian herbs – and at the same time load the finely chopped sausages into the pan.
