Easter 2023. The recipe for a delicious cottage cheese cake without yeast

This cake is suitable for those who do not want to play with dough for a long time and do not want to use yeast to make Easter cakes.

Easter cakes are traditionally made from leavened dough with lots of raisins and eggs. The dough is kneaded for a long time and usually takes a whole Saturday. It even has its own name: Wonderful or Holy Saturday.

Cottage cheese cake is just a godsend for those who want to cook an Easter treat according to the original recipe. The curd pulp is dense, but moist and soft, with a pleasant aroma of orange and vanilla. Dried fruits and nuts add flavor to the cake. Contents:

  • cottage cheese 9-18% – 125 g;
  • butter – 125 g;
  • an egg;
  • sugar – 125 g;
  • peel of an orange;
  • freshly squeezed orange juice – 40 ml;
  • flour – 300 g;
  • baking powder – 10 g;
  • salt – 0.5 tsp;
  • walnuts – 50 g;
  • raisins – 50 g;
  • candied fruits – 70 g;
  • vanillin – 1 gr.

For the glaze:

  • condensed milk – 3 tbsp. l.;
  • dry milk – 3 tbsp. l.

Soak the raisins in water for 10 minutes. Combine cottage cheese, butter, eggs and sugar in a bowl. Beat with a mixer until smooth.

Add orange zest and juice, vanilla. To mix up.

Sift the flour separately, add the baking powder and salt. To mix up.

Combine dry and liquid ingredients. The curd dough should be dense and plastic.

Add nuts, candied fruits and raisins. Mix the dough with a spatula or by hand.

Divide the dough into the cake molds and fill 2/3 of the way. Bake in the oven preheated to 180 degrees for 20-40 minutes (depending on the size of the molds). Check the readiness of the cakes with a toothpick or wooden skewer.

Remove the cookies from the oven and cool on the wire rack.

For the glaze, mix the condensed milk and powdered milk to the desired consistency. Cover the cakes with cream and decorate as you wish.

On average, Easter cake can be stored for up to 10 days, covered with a towel, in a cool place. If the cake is covered with glaze and contains dried fruit or nuts, it can be stored longer. However, it is not recommended to store the cake in a bag, as this will cause the crust to soften and mold to form.
