- 3 eggs;
- kefir 3.2% – 300 ml;
- butter – 100 g;
- sugar – 200 g;
- flour – 300 g;
- baking powder – 15 g;
- cocoa powder – 30 g;
- For decoration:
- dark chocolate – 100 gr.
For the cream:
- sour cream 30% – 500 g;
- cream 33% – 250 g;
- powdered sugar – 230 g;
- vanilla sugar – 10 gr.
First, prepare the crust dough. Eggs and kefir should be at room temperature, so remove them from the refrigerator in advance. Melt the butter and let it cool.
Break the eggs into a bowl and add the sugar. Beat everything with a whisk to get a fluffy and homogeneous mass. Pour kefir, melted butter and beat again. Sugar should be completely dissolved.
Sift the flour into a bowl. Add half the eggs and kefir. Add baking powder and cocoa and mix. Then add the remaining flour slowly. Preheat the oven to 180 degrees. Cover a 22 cm diameter mold with baking paper. Pour the dough into it and let it sit for 10 minutes. Then put it in the oven and bake for about an hour.
After the cake base has cooled, use a sharp knife to cut the top horizontally to obtain a smooth surface. The upper part is then used for decoration.
Wrap the cake base in stretch film and leave it in the refrigerator for at least 8 hours.
After eight hours, cut the base of the cake into 2-3 layers with a sharp knife.
And prepare the cream. Beat sour cream with cream, powdered sugar and vanilla sugar with a mixer.
Spread the cakes with the cream and then put the cake in the refrigerator for a few hours.
Apply cream around the edges and put it back in the fridge for at least an hour.
Grate the dark chocolate on a fine grater. Grind the dried top of the cake in a blender and mix the crumbs with chocolate. Sprinkle the resulting crumbs on the top and sides of the cake. However, you can skip this step if you want. You can also decorate the cake with cocktail cherries.
