Beer lovers get ready, Northern California brewers have partnered with a water company and San Francisco to create something unique. Perhaps this drink is so special that not everyone dares to try it – scientists have developed a completely new type of beer brewed with wastewater, writes Futurism.
Epic Cleantec has long been known to recycle wastewater in San Francisco, and so the idea was born to use this recycled water to produce something that would certainly appeal to the public. So the idea of making a special beer was born. According to Aaron Tartakovsky, co-founder and CEO of Epic Cleantec, they wanted to create something that could be “an engaging tool to connect with people.” Then brewers from the Northern California Devil’s Canyon Brewing Company rushed to their aid.

Together they managed to create a new type of beer in the style of Kölsch, a light beer with a slightly bitter taste and a pronounced taste of hops. The drink was called Epic OneWater Brew, and wastewater from one of the San Francisco residential complexes was used to create it. Note that the so-called “grey waters” were used for creation, that is, wastewater from washing, dishes, showers, bathtubs and sinks.
Epic Cleantec employees believe they can highlight the potential of this unconventional water reuse technology. Note that one of the first to try the new drink was The Guardian’s author, Matthew Canton. He noted that while the beer actually tasted good and was “drinkable”, he also noted that it had no “shower or laundry aftertaste”.
According to the creators of the beer, they chose Kölsch because this variety is more versatile. For example, researchers may find that by using more craft beers, such as IPAs, some may initially dislike it because of its particular taste.
Tartakovsky also noted that initially most people were skeptical of this project. However, 99% of those who were skeptical of the tasting were captivated by the drink as soon as they tasted it.
The researchers also note that their new beers may be safer than other varieties produced. This is mainly because the process of making beer from recycled water is under strict control.
