It is believed that Benderiki is a real Ukrainian dish, but it actually originated in Moldova. Here is a recipe for delicious benderiki and an unusual story of its origins.
We all know that beneriki is considered one of the most popular dishes in Ukraine. But even from the name it is clear that they are related to the city of Bendery, Moldova. According to one version, benderiki were invented in the 18th century during the war with the Turks in Bendery, when besieged Ukrainian Cossacks cooked pancakes with meat from leftover products.
According to another version, benderiki appeared later in the 20th century, when Ukrainians living in Bendery began to cook pancakes with raw filling and fry them in eggs. In any case, benderiki is a delicious and hearty dish that can be prepared not only with meat, but also with other fillings, such as mushrooms or cheese. A Focus I will tell you the easiest and most beautiful recipe for making beneriki.
Benderiki with chicken fillet and cheese
Meat Ingredients:
- 300 g chicken fillet
- 2 cloves of garlic
- 1 egg
- 100 g hard cheese
- Dill
- salt and paprika to taste
- Frying oil
- tomato sauce (preferably sweet and sour)
dough ingredients:
- 250-300 ml milk
- 110 gr flour
- 2 eggs
- 1 tablespoon of vegetable oil
- 1 teaspoon Sahara
- 0.5 teaspoon of salt
Prepare the ingredients for the benderiki first. Cut the chicken fillet into small pieces. Chop or press the garlic. Grate the cheese. Finely chop the dill.
Now let’s move on to the pancake batter. In a bowl, beat the eggs with salt and sugar. Add the flour and mix well with a whisk so that there are no lumps. Slowly pour in the milk, stirring the dough constantly. Finally add vegetable oil and mix again. The dough should be liquid and homogeneous.
Bake thin pancakes in a preheated pan greased with oil. Do not overcook the pancakes, they should be light and elastic. Put the finished pancakes in a row on a plate.
Create a benderiki with chicken fillet and cheese. Cut or double each pancake in half. Put some chicken, garlic, dill, cheese, salt and paprika on one half.
Fold the crepes into triangles, hold the edges and press them to prevent them from opening. Repeat with the rest of the pancakes and sauces. You should get the one type benderiki with chicken fillet and cheese.
Beat another egg in a deep bowl with some salt and pepper. Heat a frying pan and grease it with oil. Dip each mole in the egg and fry on both sides over medium heat until golden brown. Turn the bender carefully so as not to damage the filler.
Put the ready-made Benderiki with chicken fillet and cheese on a plate and serve hot or warm. Sweet and sour tomato ketchup or any other sauce of your choice goes well with benriks.
However, if you still have the strength, you can add benderiki with the classic beef liver pancake recipe.
