Contents:

  • 230 g pasta (orecchiette, spaghetti, penne or farfalle);
  • 60 ml of olive oil;

  • 125 ml of heavy cream;
  • 1 teaspoon red pepper flakes (optional)

  • 45 g of grated Parmesan cheese.

In a large pot of salted water, cook the pasta until al dente, following the directions on the package. Drain the pasta, but leave about 60 ml of water for the sauce.

Heat the olive oil in a large skillet over medium heat and sauté the onion and garlic, stirring occasionally, until soft and golden, about 10 minutes.

Add the tomato paste and cook, stirring, for another 10 minutes, until it thickens and begins to caramelize.

Add vodka and cook for another 5-7 minutes until it evaporates. Be careful not to burn the alcohol.

Add cream and paprika, if using, and blend until sauce is smooth. Add salt and pepper to taste.

Add the pasta water little by little to bring the sauce to your desired consistency. It should be thick but not too thick.

Add the pasta to the sauce pan and toss well to coat everything evenly with the sauce.

Remove the pan from the heat and add the butter, basil and parmesan. Stir until butter melts and cheese melts.

Serve the pasta hot or warm, adding more Parmesan if desired.
