Let’s go down? Extraordinary spinach, strawberry and tangerine salad

This salad is a real vegan meal packed with healthy ingredients.

Celery, parsley, and scallions add some crunchy and slightly oniony flavor. Caramelized almonds look delicious in this salad.

Spinach, Strawberry and Tangerine Salad

  • 1 cup chopped celery;
  • 1 tablespoon of finely chopped fresh parsley;
  • 2 sprigs of green onions, chopped together with herbs;
  • 1 pack of fresh spinach (280g ready-to-eat per bag)
  • 310 g tangerines, drained;
  • 1 cup of freshly chopped strawberries.

For refueling:

  • 60 ml of vegetable oil;
  • 30 ml of raspberry (or wine) vinegar;
  • 30 g of sugar;
  • a pinch of black pepper;
  • 1/2 teaspoon of salt.

for decoration:

  • 30 g of sugar;
  • 60 g of chopped almonds.

Stir in the celery, parsley and onion. Place it in the refrigerator. Wash and dry the strawberries. Cut and cool.

Mix the ingredients well and refrigerate. (The sauce will last for several days.) Shake well before adding to the salad.

To caramelize the almonds, place the sugar and almonds in a pan over medium heat and stir constantly until the almonds are coated and the sugar dissolves. Keep an eye on it as it burns easily! Almonds should be lightly toasted. Spread on parchment paper to cool.

Put the spinach in a bowl. Add the celery mix, tangerines, strawberries and almonds. Pour it over the dressing. Mix and serve!
