500 g of potatoes;
2 onions;
200 g herring;
4 tbsp l. oils;
2 tbsp. l. vinegar;
1 teaspoon mustard;
parsley;
salt to taste.
Boil potatoes in their skins, cool, peel and cut into cubes. Peel the onion and cut into thin half rings.
Cut the herring into small pieces.
Mix oil, vinegar, mustard and salt in a bowl.
Put the potatoes, onion, and herring in a large salad bowl, pour the dressing over and toss to combine. Sprinkle parsley on top and serve.
