Okroshka is one of the most popular summer soups. It is prepared from various vegetables, sausages or low-fat meat and poured with kvass, whey, kefir or sour cream diluted with mineral water or unsweetened yogurt. Okroshka is usually served with slices of toasted black bread.

Vegetables for okroshka only need to be cut, not grated. And the meat can be boiled or baked in the oven, if you decide to use it instead of sausage.

Okroshka on kefir

Contents:

  • potatoes – 4 pcs .;
  • eggs – 4 pcs .;
  • radish – 1 bunch;
  • cucumbers – 3 pcs .;
  • boiled sausage – 200 g;
  • green onions – 1 bunch;
  • parsley and dill – to taste;
  • mustard – 1 teaspoon;
  • kefir – 1 l;
  • sparkling mineral water – 2 l;
  • salt, pepper – to taste.

Boil the potatoes in their skins until they are soft. Hard boil the eggs. Cool and clean. Cut the potatoes into cubes, the eggs into slices or cubes.

Radishes, cucumbers and sausages are also cut into small cubes. Finely chop the onion and herbs.

In a large bowl, mix all the chopped ingredients, add mustard, salt and pepper to taste. Mix it well.

In a separate bowl, mix kefir and mineral water. Before serving, pour okroshka with this mixture or immediately pour into plates.

But some believe that okroshka is better grafted. In this case, immediately pour all the chopped ingredients with a mixture of kefir and mineral water and refrigerate for at least an hour. You can also add celery, sweet pepper and your favorite aromatic herbs to Okroshka.
