Ingredients (For a mold with a diameter of 15-16 cm):
- Shortbread cookies – 150 g;
- Butter – 60 gr.
- To fill:
- cream cheese – 400 g;
- sugar – 75 g;
- Cream (10% – 33%) – 100 ml;
- avocado – 1 pc.;
- Gelatin – 10 g;
- cold water – 40 ml;
- mint – 5-10 g;
- Lime – 1 pc.
Cooking method:
First you need to prepare the base. To do this, break the cookies into crumbs in a blender. Pour into a bowl, add melted butter there and mix. Lay out everything in a removable form, with the bottom and sides covered with parchment paper, flatten and pinch the bottom. Put it in the refrigerator while you prepare the filling.
Soak the gelatin in cold water for 15 minutes, then thaw it in the microwave or on the stove. Grind the mint in a blender and grate the lime.
Add sugar, cream, avocado pulp, mint, lemon zest and juice, melted gelatin to the cream cheese and beat with a mixer until smooth. Green dye can be added if desired.
Put the whole mass in a mold on the cookie base, smooth it well and put in the refrigerator for 4-6 hours. Decorate as you wish.
