Solyanka Odessa is not a soup at all, but a second dish of rice, cabbage and chicken.
We are used to the fact that the hodgepodge is a certain first course. But the Odessa hodgepodge is definitely the second dish. It is made from rice, cabbage and chicken, the recipe is very simple, the process is very fast. According to the Ukred source, any meat will do – again, chicken meat is quite acceptable for speed.
Odessa hodgepodge
Contents:
- chicken fillet – 600 g;
- rice – 0.5 cups;
- onions – 2;
- carrot – 1;
- cabbage – a small head;
- tomato juice – 200 ml;
- vegetable oil;
- salt pepper
We start the Odessa hodgepodge with rice. It should be clean and sorted. We pass it through a colander and let it drain for 5 minutes, then pour it into a separate deep plate.
We wash the chicken fillet, dry it with a paper towel, clean it from excess cartilage and films, cut into portions. We cut the onion into small cubes, three carrots on a medium or coarse grater, cabbage into strips up to 5-7 mm thick.
We put a pan on the fire, heat the vegetable oil in it. Pour the onion, cook for a couple of minutes, stirring. Add carrots, cook for another 3-4 minutes. Add the meat and fry until golden brown (10 to 15 minutes). And when this happens, we add all the other ingredients to the dish – rice, cabbage, tomato juice, salt and pepper. Mix everything well, reduce the heat to below medium, cover the pan with a lid and simmer for half an hour until the rice and cabbage are completely cooked.
We raise the fire, let the dish brew and serve the Odessa hodgepodge to the table.
