Chicken dish with original sauce: how to prepare the famous Italian Gonzaga salad

Although this salad has different names depending on the province, it is prepared throughout Italy.

If you want to try something Italian style instead of pizza or spaghetti, try making Gonzaga salad. It is also called Mantuan salad or Mantuan chicken.

This is a recipe in which chicken, capon or guinea fowl meat is usually prepared in advance. It is ideal if you cook chicken broth and then use its meat to get an original dish.

Gonzaga salad

Contents:

  • boiled chicken 800 g;
  • sugar 10g;
  • half a glass of dry white wine;
  • water 1 sec. l.;
  • raisins 50 g;
  • olive oil 20 g;
  • white wine vinegar 25 g;
  • grated lemon zest;
  • salt and pepper.

First, mix the vinegar and sugar in a small bowl by adding water. Pour the sauce over the raisins and let them sit for about ten minutes.

Meanwhile, prepare the spices for the meat. In another bowl, combine the grated zest and wine, then add the butter and mix well.

Drain the raisins, but reserve them because you will need to add them to the meat seasoning. Mix well.

Finely chop the chicken and place it in a pot. Season with raisins.

Continue adding spices, salt and pepper according to your taste. Mix well, refrigerate everything for about 1 hour, and serve the Gonzaga salad.

You can also add pomegranate seeds, pine nuts or walnuts to the salad.
